Planning and Design
Once the type and style of facilities to be offered have been decided, the most important step is planning and Design.
There have always been many ways of attempting this stage with a choice of directing your brief via an Architect, or Turnkey kitchen house. Both of these have their shortcomings in that neither is responsible for the eventual operating profit centre or labour input.
We at PNA take great care in advising on the most suitable layout and specification for the project at hand. Our designs are based upon practical experience by people who are professionally craft qualified and have worked in kitchens and not designed by technocrats who have no live cooking experience or craft qualifications.
We have no ties to any manufacturer or distributor. Our choice of equipment is totally impartial being based upon practical experience from working on over 1000 projects. We are known for our good ergonomic design, labour saving choice of equipment and highly productive layouts. This is backed by Paulís thirty-five years of Food Service industry experience.
No concept will be over or under equipped, but will be designed to function ergonomically, and efficiently with the minimum of capital expense and labour.
Specifications
The Retail & Catering Industry covers a diversity of styles of catering. Hotel kitchens serving meals for most of the day require a different standard of equipment compared to a small Café open during peak hours. The specification of equipment must be suited to the type of operation.
PNA will produce a detailed specification that suits your budget and operation, and then tender the bill of quantities to companies that have a proven track record within the supply industry. A report will then be produced recommending which contractors to appoint.
Services
Production of scale CAD drawings is undertaken in house. Drawings will indicate the connection points for Gas, Water, Wastes, and Electric and also show any other aspects required by Health and Safety Legislation and Hygiene Regulations.
Where applicable elevation drawings are produced to indicate the detail relevance to the overall operation. These drawings are also an aid to the fabricator of specialist Stainless Steel items to cost and build the specialist equipment.

The law is constantly changing, with new legislation and guideline appearing constantly.
Frequently a good personal relationship with the E.H.O. evaporates overnight when there are problems. It is therefore far better to place those problems in the hands of a third party that, being acquainted with the implementation and interpretation of the law, will act in your interests.
